Easter Dinner

The menu:
    Chicken Fried Chicken
    Mashed Potatoes with Country-Style Gravy
    Mom’s Sweet Carrots
    Kiwi, Mango, and Watermelon (brought by Alyssa & Leanne)

Before church, I peeled and cut the carrots, peeled and boiled the potatoes, and prepared the coating for the chicken (see baggie of crumbs).  For the coating, I added crushed saltines, flour, seasoned salt, salt, and pepper.  You can add potato flakes if you don’t live in a place where you can’t find fancy things like that.
So yeah, Mike won so many of these random packets of things for the White Elephant party last December, so I had this gravy and, wow, was it yummy.
 I forgot to take any more pictures, surprise.  Our 2 Canadian friends came over after a very long strange Easter church service, and we had a nice little dinner.

Turtle Bars

Also on Saturday, I decided on a dessert to make for the Easter Dessert/Kids’ Egg Hunt gathering we Extremies were having the next afternoon.  I found a recipe for Turtle Bars I had always wanted to try but never had and gave it a go!  It was super easy, but of course, I forgot to take the pictures I wanted to take of the final product.  Here is the first half of the product, going into the oven:

And here is the result of dropping the bars onto the counter for several minutes because they were so hard!
I asked our neighbor friends later on that night if they heard the booming noises and they just thought we were nailing something.  Our building is the opposite of sound proof and we practically all live together in the same apartment due to what we can hear of each other, so phew!  It didn’t bug them too much. J  

Oniony Spaghetti

Being home for less than a week, I continued to try to buy as little food as possible.  Luckily, we had all the ingredients in the house for spaghetti (except for my favorite – parmesan cheese).  Last Saturday morning, I was running around doing lots of things and Mike offered his services to help me be less busy.  I listed off a thousand cleaning items he could do (hehe), but he didn’t look too happy!  Long story short, I got him to cut up an onion for me – the last one in the house.  Unfortunately, I forgot to tell him I didn’t want to use all of it in this dish.  But after he had done perfectly, just as I asked, I didn’t feel like scooping any back out to save for later.  So, alas, we had a very oniony spaghetti sauce, but it was really yummy.

Chicken Alfredo


Mike and I are finally home for a few days and, praise the Lord, the week fell on Holy Week so our office is closed today.  I am getting some much needed rest, laundry is finally caught up, fish tank is clean, house is getting cleaned, and I can actually cook something!  (See last post for traveling woes hehe.)

When we're only home for a week at a time, we try to buy as few groceries as possible.  I had one more chicken breast in the freezer so I rummaged through my cabinets and thought I'd make some Alfredo sauce with pasta and add the chicken.
